Biryani - made this way?

There are usually 2-3 methods of making Biryani. Please share recipes specifically of the one that has rice boiled separately and qorma separate and then both layered for Biryani.

Also - add what ever u do to make it yummier !!! :slight_smile:

I've actually heard of 4 methods of making Biryani. This one is employed by those who don't know methods 1-3.

Procedure:

1) Buy quality biryani from restaurant.

2) Empty contents into your best looking chawal platter.

3) Make sure that the cooking pot, spatula, cutting board, knife, and a couple of masala boxes are strewn across the kitchen counter. This way guests will think you slaved the whole day to make it.

4) Go the extra mile and rub some biryani grease behind your ears, on your wrists, and the base of your neck the same way you would your favorite cologne or perfume. Let them imagine the blood, sweat, and onion tears you shed in making the biryani.

5) Have some pride and at least manage to make the raita by yourself. It's the least you can do.

6) Impress your guests and especially your in-laws with your culinary plagiarism. You may choose to aag lagaao them by saying that the recipe is a family secret or give them a vague recipe with some ridiculous ingredients or instructions, added deliberately of course.

Anyone else with that recipe.

Im confused lol i always make the rice seperate and then make the qorma seperate and then layer the rice and put it on dum and then mix after.! Would love to read different methods

^ I think that is the main way....then there's the hyderabadi way (at least I think its hyderabadi) which is you bake raw marinated meat with rice....

daffy, I'm a lil confused by your question, so you want to know the different ways of making the biryani masala, right? because you want to stick to the method of layering the rice and meat and putting it on dam?

Normally, I fry onions and garlic, add masala, add chicken, bhoon it...boil the rice with bay leaves and cardamoms and salt (I always discard those in the end before serving) and then do the layers and damm.

Another way, you can marinate the meat with masala and yogurt and cook it just like that.
Or you can add tomatoes or just yogurt.... depends really!
There's really several ways to make it, you have to play around wiht it. I've been cooking for 4 years and every single time I made biryani it was trial and error...never knew if it owuld come out right or not. only very recently figured out the best way to make biryani the way my husband and I like it.

and contrary to what some will have you think....using packet masala isn't the worst thing in the world, esp if you're a beginner. You still have to cook/prepare the food, you still have to know the ratio of masalas and how much to add (for some, a pinch of shan masala woudl be enough, while for others, an entire packet is pheeka).......although I've finally found the best way to make biryani (for myself), I still rely on shan masala for the flavor......now figuring out those spices and their ratios is another project of its own

I layer the qorma stuff on the bottom and spread rice on top (which are not fully cooked) dum them either on stove or oven. When done mix them up. I do use shaan masala as I never have all the spices on hand that go in biryani.

dear duck u r askng for sindhi biryani layers wali. this is most delicious one that i like it most.

first dear u marinate the chicken with national sindhi masala and garlic and ginger mixed in yougurt. and let it stay for 25 min at least.
during this u make masala for it, take oil and put onion fry till tender, put garlic , ginger, salt, red pepper powder, and tomatoes, add bit water to make tomatos soft (i used frozen tomatoes). then add the chicken and cook on medium flame till water dries and chicken cooked. then bhoona for 5 min and put garam masala.
boil rice serperatly. nw take pot in which u wanna dam rice, take oil, put white zeera when it caracle, put chicken, then rice then chicken and last rice put zarda colour, mint leaves and put it on dum, and serve.

Thanks girls! Some people add rice to the masala that is prepared & cook them together. Others boil rice separately & prepare masalay separately & layer them later.

My method:

Brown onions. Add garlic/ginger. Add tomato. Add a whole packet of shaan Bombay biryani masala with some extra salt and extra mirchi. Add meat. Cook. Ad potatoes. Cook. Boil rice in separate pan. Layer rice then the curry then the rice. Add food colouring over. Add turka. DAAM. DONE. EAAAATTT!!!

Daffy, look for the biryani competition thread .. Shab e Hijr and many others shared some awesome biryani recipes in there ... specially Shab's recipe is fantastic , you will totally fall in love iwth it ..
