I normally add ginger,garlic and whole garam masalas to the rice when boiling.
This is the list of spices for the rice (I wrote down the recipe since my sister had me make the biryani last time):
Javitri
Jaifal
Namak
Pissi huwi elaichi
bari elaichi
tez patta
gol mirch
Anise seed
kala zeera
sabit zeera
daal cheeni
kewra
a few drops of lemon juice
Add oil to the pot, fry some elaichi and laung and then add the water and the soaked rice. It just amplifies the flavour.
I wanna try this recipe too.Thanks CB for posting the quantities of each stuff.A quick question,do you add whole garam masala or anything to the rice when boiling them..?/..(I see a star anise in the pot of boiling rice ,so I ask).
I do not have mace.Rest I have it all,I guess it should be fine to get that aroma...??
I always add Cinnamon sick and long for boiling rice even if I boil rice for zarda. you can also add bay leaf i didn't have that in my pantry. chips mace will make a huge difference in biryani. can't you get it from nearest grocery store?
and girls add spices according to your taste. I don't like the heat of garam masala and red pepper . i would rather use green chillies for heat.

People I cannot cook at all but im stuck as i love biryani and reading this thread has made my mouth water!!!
i know this is a dumb question but if i want to make biryani using a whole chicken (for 4 people) do i just double the quantity for everything including the amount or rice specified and the spices? Its just logically this makes sense but when ive adjusted quantities in the past it doesn't work!
Shab says she only used half a chicken but if im using a full chicken then?
also.... i know when you make biryani you dont initially cook the rice fully - i usually use a rice cooker but if i am just boiling can someone give some direction please???
