Bihaari Kabab

What kind of meat is used in Bihari Kababs?. If it is beef, what portion of the cow is it?. Whats the best way to cut cubes for bihari kabab skewers?. How can it be made tender?.

I am not looking for recipes as it is printed on the back of every Shan pack. I am looking for tips to make them taste like the ones we eat at restaurants.

Beef is normally used. any fat-less portion would do the job.

Use an un-riped papaya to make the meat tender.

Beef is used..its called pasanday wala gosht..our butcher cuts it when you tell him bihari kabab banana hay. Its usually the inner thigh part.

As for tenderization...we use papaya paste. We usually store it in the freezer in ice cube tray and once its in cube form..we just store it in a ziplog bag..so lets say if its 1 kg of meat..we'll use 3 cubes.

Where can one buy RAW PAPAYA in the USA?

make a mixture of mustard oil, a lot of garam masala (almost a packet), salt, red chilli. garlic, ginger and raw papaya. marinate the meat (preferably without any fat) for more than an hour and BBQ it. i think that's the easiest way of cooking Bihari kebab but above all you need a help of a Bihari person to cook Bihari. :)

I found two recipes, the first one:

Bihari Kabab

Ingredients:
2.00 kilograms beef pasanda (thin sliced)
2.00 teaspoons coriander powder
2.00 teaspoon red pepper powder
2.00 teaspoons garam masala powder
2.00 medium onions paste
4.00 tablespoon mustard oil
1.00 cup yogurt
2.00 medium onion sliced
0.00 As per taste salt
1.00 scopes papaya (raw ) ground

How to Cook:
When you buy Pasandas get them thin sliced about 2- 3inches wide 4 inches in length.
Two medium onions that you have sliced should be fried brown and crushed by hand. Now mix well all the above ingredients and the beef with your hand.leave to marinate for about 6-8 hrs in the fridge.then put the meat in the skewers( folded in layers).
Close held together.put the meat over heated charcoal turning it regularly till meat is barbecued from all the sides.serve it hot with paratha and raita.

And the second one:

Bihari Kabab

Ingredients:
1 1\2 kilograms beef pasanda (thin sliced)
4 medium onions skinned and thinly sliced
1 cup oil
8-10 - whole red chilies
1 1\2 tablespoons ginger, minced
1 1\2 teaspoons salt
1 1\2 teaspoons garam masala
1 cup yogurt
4 tablespoons papaya (raw ) ground
1\2 cup mustard oil

How to Cook:
1. Cut beef into 2 inches wide and 4-5 inches long strips. Thoroughly wash the beef strips and squeeze out any water. Place the meat in a colander and keep aside.
2. Heat oil in a frying pan. Add onions and fry until light brown in color, about 8-10 minutes. Remove onions from oil and fry the whole chilies just for few seconds, otherwise they will burn. Discard the oil and Grind the onions and whole chilies in a food processor to a smooth paste.
3. Place meat in a large bowl. Add onion paste, ginger, salt, garam masala, yogurt, ground papaya and mustard oil. Mix the mixture really well for few minutes with your hands until the meat is coated well with marinade.
4. Cover and leave to marinate at room temperature for about 3-4 hours or overnight in the refrigerator.
5. Thread meat strips onto skewers in folded layers.
6. Put skewers carefully over a gentle charcoal flame and cook until meat is brown on each side, about 5-8 minutes.
7.Transfer to a serving dish and decorate with onion ring, green chili and coriander leaves.
8. Serve with paratha or nan and mint chutney.
