big dinner menu help

i have peole comeing over for a sunday dinner. and these people are very good in cooking. i dont want to mess up. 8 adults. 12 kids
i m thinking of making
koftay unday,
chicken karahi
fish with masala
pea pulao
palak
salad, raita chuntney
some desert which i still thinking
maybe i would order pizza for the kids.

can someone please tell me some good recipe of some solid but soft koftas.
my recipe is for keema, all spices, and bhuna besan and egg. make balls and shalow fry them and then add to masala.

and can someone tell me besides going to the grocerry store is there any jelly we can buy from walmart, target, hy vee...

Make trifle for dessert, for the kids and some adult dessert for the baRay log.

Get jelly from desi store. Aahmed Jelly in assorted flavors.

Yes order pizza for kids. You can also make chicken wings or fried chicken.

I think remove the palak or if you do want a vegetable dish then do palak paneer or palak aloo, or dum aloo.

i agree with niksik..palak alone doesnt look good...make an exotic kind of veggie dish...u r doing all salans...i think instead of fish with masala..make it fried fish(spicy)...and for the kids.. any pasta...or minced meat/chicken pie would be a good idea !

I agree with above, go for fried fish instead of another salan.

Kids -Ordering pizza would make it very easy and a load off your mind. An alternative is to fry or grill some frozen burgers or chicken burgers, and a big tray of frozen potato fries or wedges. Get some burger buns and the kids can build their own burgers.

Pizza is good for kids but maybe even better would be popcorn chicken and/or fish...this way, its something that you've made, you dont have to deal with delivery guys etc. Also, put out a little tray of carrot stix, celery stix and broccoli with a little bowl of ranch dressing...kids AND adults will like! :)

THEN for the salad...make it really pretty. Put your lettuces all chopped into a bowl then add carrot shavings, chopped tomatoes, quartered cuke slices, red onion slices, black olives, green olives. A sprinkle of grated romano on top and people will say WOW!

Snik, for instead of koftay anday you could do nargisi koftay too. They are also koftay anday but with a twist. Chicken karahi sounds good. If i were you i would probably do either baked fish or fried, desi style instead of a salan. And instead of plain palak do palak paneer or aloo palak. Peas pulao is also good. Not sure where you are at but if its stil warm in your area maybe make kulfi. I am sure both adults and kids would love "ice cream". Its easy yet delicious and impressive.

For kofta recipes, there are plenty of threads on those. I always make sure the keema i use has been washed and drained for atleast a whole day. I add eggs as a binding agent, and spices (lal mirch, namak, khatai powder, sabut dhanya etc etc). IF the mix is too runny i also add bhuna besan. I have had good results with this method several times.

Snik u can find orange and strawberry jelly(no gelatin) in walmart.

thanks alot everyone... i found SNACK PACK brand jelly with no gelatin.
as for the fried fish i know it's a good idea but it always look good when it's fried fresh. as for me i have to have things done a day before if i fry the fish that day the whole house will smell like a fish market.
i myself was thinking of skipping the palak and make mixed fresh cut veges.
can i make gulab jamun. some easy recipe???

Gulab Jamun-
2 Cups dry milk (not sweetened)
3tbl suji (semolina)
3tbl cream
2tsp baking powder
2tbl all purpose flour (maida)
2tbl oil
2small eggs- (beaten) use as needed

6 elichi
2cups sugar

1 cup water

In a pan to make Chash-

add water, sugar & elichi & cook until sugar has dissolved. Do not make it too thick, it should be syrupy. & turn off flame & set aside.

In a bowl add dry milk, suji, maida, baking powder & mix.

Add in oil, then cream. Mix with spoon

Slowly mix in eggs (do not use all the eggs, use only as needed to get the consistancy that you can make balls, if you add too much eggs it will get watery)

Make small to medium size balls by putting a little oil on the palms of your hand.

Heat up enough oil to deep fry.

& slowly add in the jamun & cook until color changes to reddish-brown.

Take them out & put them in to the chas on low heat for atleast 5 minutes.

the gulab jamuns will increase when you fry b/c of the baking powder, so dont make a big size. Make medium size balls.

The dough should be creamy & smooth to make gulab jamun or else they will be hard.

When you fry you have to fry on MEDIUM heat.

If u have a garage then u can fry fish there, in an iftar party my friend did all frying in deep fryer in a garage and no smell in home.

add chopped almonds and pistachio...and serve chilled...
