i need a recipe for bhurta…
ive never made one..i tried b4..but my dad didnt like it…it had yougurt n he tld me bhurta dsnt have yougurt..i duno..:frowning:

½ kg. large round brinjals

1 chopped onion

1 teaspoon finely chopped green chilli

1 chopped tomato

2 teaspoons oil

Salt to taste

Grill the brinjals on a fire until they become black in colour. Remove the skin and mesh thoroughly. Heat the oil and fry the onion for ½ minute. Add the green chilli and fry again for a few seconds. Add the tomato and fry again for 2 minutes. Add the meshed brinjals and salt.

Barbie we call it egg plant. :D

We never add tomatoes in it though. But over we use the same cooking directions.

PCG mashed potatoe is samething as alloo ka bhurta except that they add salt and sour cream cheese and we don't :)

you just need to boil the Potatoe, peel them, and smash them. After that add red chillie powder, salt, green chillies 2 chopped, corrinder few leaves, mix all the ingredients in it. If you want you can fry it otherwise you can just serve it like this.

u just want bhurta or something else too? BG has the recipe up there for it. I am sure you can mix two diff bhurtas together too.

I dont have exact measurements since I just eyeball my ingredients. I think the traditional method is to roast the eggplant on fire or in the oven. I just peel, cut and boil egg plant chunks. Keep aside.

Make masala like you would. Chop/Slice onions, sautee in oil till soft and translucent in color. Add tomatoes, namak, mirch, sookha peesa dhanya, haldi. Bhoonify for a bit. Add your boiled egg plant. Cook until water has evaporated and the egg plant is all mashed up. I usually add grated ginger 15-20 mins before its done and also some chopped fresh green chilli. Make sure you have lotsa onions since baingan tastes good with lots of masala. Add either acha ka masala or lemon juice per ur taste before serving.

I am sorry if this is not the recipe you want. But this is how I always make it at home. Ammi esp likes it and its very hard to please my Ammi :D

We do ours a little different.. boil fried onion, potatoes, diced tomatoes, and eggplant with salt, daniya, laal mirch, haldi, garlic and ginger.. boil until everything is pretty much melted, then mash/blend.. add lemon, kasoor ki methi, and a couple of teaspoons of tomato paste, and then add the baghaar of oil, zeera, rai, and full red chillis.. then add fresh daniya when you are ready to serve
