Bhindi -- YUM!

concocted my own recipe for bhindi and everyone really enjoyed it…thought to share.

end product:

add oil to frying pan and heat
add generous portion of medium-sliced onions and a couple of pinches each of: zeera, saunf and kalonji
fry until onions are transparent and just starting to turn golden
add two or three plum tomatoes, diced
as this mixture is reducing on medium heat, keep stirring
meanwhile chop bhindi into three pieces each (i.e. don’t cut it up thinly or too fine)
keep adding the bhindi as you chop it to the pan
sprinkle cayene pepper and salt to taste
do not cover
keep stirring for about 5 minutes on medium to high heat
add 1 tbsp of soaked tamarind
add 1/2 cup of stirred yogurt
stir well and cook for another 5 minutes
voila!

I personally dislike bindi , no I actually hate it :(

But husband totally drools over em and so I have to cook it quite often , will be trying your recipe soon inshallah , thanks so much for sharing.. this one seems different .. its got yoghurt in it too .. Just one question , I see that you dont fry bindi's and directly add them into the onion .. does the slimy stuff go away from the bindi?

I tried an indian recipe once before ( with no onions ), the bindi's were fried directly in spices and tomato .. the sliminess remained and husband didnt like it ...

I can't stand the sliminess so I won't eat it if it's there.
I think that adding the "khattaas" (i.e. imlie and yoghurt) takes away a great deal of slime. (Just like adding lemon to arvi takes the slime away)

And yes, while I do not fry the bhindi a lot, it still does get it's fair share of it in the 5-10 minutes after it's been added.

Try the recipe.....you may be pleasantly surprised yourself. And I promise that he will like it.

No...I've never tried that. I'm not a fan of the sliminess that remains if you cook bhindi whole.

my Bhabhii makes it with no sliminess whatsoever...i think she soaks bhinDii in something for 15 minutes or so which takes away the sliminess...i'll ask her then let you know, iA. :)
