Take a large onion and slice it up. Fry with a little zeera until the edges are brown. Add salt, haldi and red chillies. Add teh packet of okra and a tsp of lemon juice so the bhindis don't do the lace thingie.
Cover and cook on low.
Some people add tomatoes...right when you add the masalas.

Thinly slice three onions ... and shallow fry them till they turn slightly brown .. drain and keep aside ...
In the same oil , shallow fry the bindi's ... when they turn brownish , drain and keep aside ...
Now in a pot , add one teaspoon oil , fried onions and bindi's and when its become really hot, add the salt, red chilli powder, green chillies chopped and mix it well ... finally add tomatos and let them be on dum for a good 20 minutes .. stir occasionally .. bindi is ready ...

I made em yday..tasted alright...but bindi had gone abit mush mush...
I made the masala with the onions...then put chaat masala on frozen bhindis (my sister told me to..dont ask me y!) and then I shallow fried the bindis till they were brown..then i added into the masala and bhunned it a bit...then left it on low heat for abt 40 mins to get rid of the lacie thing :s
The dish had gone quite dark..probs frm all that cooking..but tasted ok...

wow 40 minutes is a LONG time to cook bhindi :) that's probably they got so mushy.
