i cook the bhindi 2 ways

fry bhindi in little bit of oil to out the LACE.
take out.
add more oil sought in onions chopped, not too thin and not too thick.
add tomatoes. sought in. now add bhindi. add salt, red chilli, green chili, haldi, deghi lal mirch will give color, garam masala. that's it put on dum. don't cover. let it sit on low flame for 10-15 min.
you already have fried the bhindi at the beginning for 10 min. garnish and serve.

second way.
do the piyaz and tomato thing and bhindi fry like above.
but in the tomato piyaz thing when u sought inn n ad 1 1/2 cup tomato puree. bhonofy . add masala. green chilli. when well bhonofied add bhindi again do dum without uncovering.
not uncovering the bhindi wont make the bhindi soggy.

Re: Bhindi piyaz

I fry the bhindi

then fry onion and tomato like normal, with all the masalas..add hte bhindis after they'e been properlydrained. stir it around a bit and then leave it covered for about 10 minutes on low heat.

then i add fresh pyaz, and cover that for about 5 mre minutes.. in the end, add just a tiny bit more fresh oinoins..gives a bit of crunchy feeling to it

Re: Bhindi piyaz

is deghi lal mirch same as kashmiri mirch?

Re: Bhindi piyaz

thanks guys ... no wonder , I have been going wrong .. I used to fry bhindi's to the point of almost burnt... and then fry the onions till they became crispy ... and then add the two togeather and some tomatoes and all the masala's and leave it on dam ...

it never brought the usual nice desi taste ... i will try making it with onion tomato masala and then adding the bhindi's ...

Thanks all of ya :-)

Bhindi ko alag se fry karne se unka rang ganda sa ho jata hai, I never do that, nor would I recommend it.

What does this mean

you know , the slime that comes out of bhindi ... thats being refered to as lace ... that slimey texture of the bhindi disappears when its fried ....
