Hi, I have been gifted 35,000 rupees by my khala who wants me to make a piece of jewelry which will come in handy in the future for whenever I get engaged or married.

I wanted to make a Stone Ring e.g. emerald.

But what is the best investment?

If you are talking about investment in terms of resell value, stones don’t count much when you try to sell a piece of gold jewelry. Get something like simple/plain bangles so that when you get married, you want to sell those to get something that is in trend, they could offer most value. Also get 24 karat gold so don’t buy something off the shelf because they might be 18-20 karat. Just suggestions - your choice.
