Hello all, I have an odd sort of request. My husband-to-be loves nothing more than a good cup of tea, and is a frequent tea drinker. I, on the other hand, have never drank tea in my life. Hate the taste, but I hate making it too because I never know if it actually tastes good, or if my parents are just drinking it for my sake. So, here I am, requesting all you awesome ladies to help me brew a cup of tea that tastes amazing. Teach me your ways and tricks, ladies. Tea is the way to my man’s heart XD
Boil very good quality fresh cow’s milk (Some vendors add water and have heard some mix powder milk in fresh cow’s milk).
In a separate pot make tea using good quality patti (We use Tapal and 2 months ago I brought new kenyan tea to try which truned out nice but am forgetting the name now. Will write when I get it again. Also I use only teabags by lipton to make quick microwave tea, never to make this pot tea recipe).
Then mix in the cup depending on your own preference of strong, light, medium tea.
I usually fill (depending on my mood) 1/2 or 3/4 of my mug with milk+1 suger and add concentrated tea. Since I never measure the amount of patti so sometimes the tea is darker than I like. Strong tea doesnt suit me but lighter tea doesnt make the same taste so I go medium.
(I used to add cardamom also but it doesnt suit my system. A friend of mine adds cocoa+cardamom).
On his last trip, my father invented a tip with which he made tea for me. I offered to make tea for him (He doesnt like drinking tea) but he said, “Let ME make tea for you. I guarantee you’ll love it.” He was right, it tasted quite good. He refused to share his tip with me but he had to when I did not leave him alone and insisted that he had to because the tea tasted really good. He said he had added half a teaspoon of ‘Everyday’ powder milk ( http://www.stationery.pk/image/cache/data/kitchen/Nestle_Everyday_Milk-500x500.png ) in my cup apart from the normal fresh milk. I usually never drink ‘Everyday’ milk tea but since after that day, I sometimes add half a teaspoon of it to my cup and it tastes great.
Some people mix milk and tea in the same pot but I dont like the taste of tea made that way. Both the tea and the milk lose their aroma and flavor.
I, on the other hand, don’t like the taste of separate tea. I love the mix one. Boil the water(quarter cup) add one and a half teaspoon of patti(I use Lipton). Let is simmer until the kehwa is somewhat reduced. Cover the pot with the lid and turn off the heat. Putting the kehwa on dum(for a minute or two) really makes a difference. Add in milk(from which cup I drink my tea, I fill it with milk my style of measurement) and give it two boils then let it simmer for few seconds. Your tea is ready… love the color, aroma and taste!
when I make tea for myself, I prefer adding sugar while I make it.. At any stage. Sometimes in kehwa… Sometimes when I add milk… I don’t add sugar in my cup. There are days when I make a super quick cup of tea adding water, patti, sugar, milk all together, give it a boil and voila
sometimes I add green cardamom. You can add cinnamon too.
If you don’t have pure milk or its thin, the amount of water should be less… Or you can use tetrapack.
PS. Don’t forget to read BISMILLAH before making the chai
I am not a lady but you should try making Kashmiri tea. Buy kashmiri tea leaves, add a pinch of salt, a pinch of baking soda, let it cook for 30 minutes until you see pink froth forming. Add a cup of cold water. Mix and shake. and then you can add milk and enjoy. You can also add almonds and stuff
Quickest way to indulge in a cup of chai is to make it separate -- this doodh-pati shouldnt be called just chai alone, it's a variation of it people.
Ok back to chai, So boil a cup of water or use a kettle.
Pop a tea bag in a cup (which one are you planning to use/ or currently use?)
I find tetley Orange pekoe the best one so far
Now after popping the tea bag add sugar (however much he takes) pour the boiling water, make sure the water is hot hot hot and hasn't been sitting for even a minute --
Stir the tea bag around with a spoon, I stir for about 30 secs then I leave it to steep for another 20 secs. Add milk (I use 2%) take the tea bag out and serve
If at times I really want to enjoy a cup of chai or have a friend over, I boil the milk prior to adding
First you need to find out what kind of tea he likes because some like it in fresh milk, some in evaporated milk, some like it over cooked, some like to just give it a boil, some like it half part water and the rest milk, some like it completely in milk and the list goes on. Once you find out, make it that way.
