I have loads at home, apart from juicing it and including it in a salad, is there anything else I use it for? any recipes anyone?

Chukandar gosht... or use it in cakes
I like to roast beetroots and then toss them with balsamic vinegar, salt and black pepper. It's great for lunch.

I make beetroot raita with yogurt. You can also add it to veg cutlets, kebabs etc
