I marinated beef for BBQ for the first time. I did add a good quantity of meat tenderizer to it and left it over night but it turned out hard and chewy. I was wondering how to make it tender. Also, could somebody share tried and tested recipe for afghani tikka?

use papaya ... green papaya.
Cut it up and make a paste using a little water....about 2 tbsp of paste for 1 pound of meat
