BEEF Nihaari

Today I’m in the mood of some BEEF :chilly:

So I’m in my studio making tasty tasty BEEF nihari using SHAAN Nihari mix. Whenever I use mixes (in rare cases), I always make minor changes to create a unique flavor of my own different than the box recipe. So, I added crushed garlic / ginger & prefried onions into the mix while bhoon it. And I wanted to add bhooni saunf to the gravy in the end along with bhoona aata but guess saunf is missing in my collection of spices so maybe ill skip that step :phil:

Now the whole upper floor smells like aromatic BEEF in Nihari spices. It’s in the ‘galaaying’ stage right now. Will post picture if it turned out nice. No one’s here & I dont have anyone to impress so I’ll impress myself :cool1:

Ok… so this time I miscalculated the ataa quantity & I guess I put too much & the gravy became verrrrry he thick so I had to add water to thin it but in all that, the gravy quantity became too much & nihari lost the nice reddish appearance. And I think there’s supposed to be onion tarka in the end as we the box recipe but I’m not tarkaaying it else it’ll become too much oily. I know Nihaari supposed to have too much oil but I’m gonna seperate it before eating anyway so am skipping the tarka step.

LP, trying to load a short video I made after adding ataa & removing excess gravy but it keeps saying, “Error loading attachment”.

And why oh why do you not like Nihari? That’s no good :no:

​​​​​​@FigmentOfYour , I remove oil too before eating. I don’t like the taste of nihari. It feels like it’s a mix of paaye ka salan and regular shorbey wala salan. I think Nihari was invented after both the leftovers were mixed :hehe: :stuck_out_tongue:

Mum has never made nihari but I’ve had nihari at other places and never liked it. Mum isn’t fond of nihari either.

Sorry i went to pray, eat, tea & now it’s prayer time again.

LP, then you can be sure that you have not had authentic Nihaari then. Most of those hi-tea, buffet places in Pakistan have the same taste of nihari as you describe. And I never eat Nihari at those places because it does taste like they have mixed the left over beef. It neither smells nor tastes like Nihaari is supposed to.. I made it once about 6 months ago. It tasted too great. Would have made you lick your fingers. But this one, I think adding water to thin gravy has also killed all the flavors so it tasted just okay. Neither too bad nor the taste I was craving in the morning. Its just random. Also the beef was not nihari cut which inespecially got last time. This was regular boneless beef more suitable for tandoori or tikka. Maybe that also affected the over all flavor.

I would be nice if SID can also provide that link to guidelines to creating a blog. I thought i had saved it when he gave last time but I can’t find it.

I’m gonna put it on ‘upload’ again before going for prayers. Hope it will upload it this time.

Nihari is a contemporary dish and it was invented for soldiers of the mughal empire in the late 19th century. Authentic nihari is cooked in beef fat and not in any oil - both in Delhi and in Karachi’s restaurants like Javaid Nihari. People who eat it on a weekly basis - certainly die of heart attack as I have seen some of my friends dying before their 40th birthday!

@Mostar95, I have eaten it with corriander leaves, ginger & green chillies but never with tomatoes. Maybe will try next time.

My mother cooks only either lamb nihari or chicken nihari.

@Gothamist Yes there is. Nihari can also be made of chicken & mutton / lamb. My mother actually makes the later two & not beef. But I like BEEF in Nihari because that special Nihari cut beef has unique taste which you can’t have in other two types of meat.

I tell you what Camel meat nihari is even far more tastier!

Ohhh… Thanks Mostar95. All my relatives have moved out of Karachi now. The newer generation I mean. The old generation mostly dead or very old moved out too. Very few relatives left. Karachi local mafias and ghundagurd running the city & controlling people and their mindsets as they desire. People too stupid to realise that. Not sure if I’ll ever be able to experience those things or see the places I did in my childhood including maternal home sigh

I love camel meat.
