No they do not , they regain their shape, texture and moisture when you broil or BBQ them.
It is all tried and tasted. I used to face the problems you are facing before I started to use meat hammer.
Again do not BBQ or Broil more than 5 to 7 minutes per side.

i know this..forgot to mention earlier! but if u dont have a hammer..i have seen people using a BAILUN just to get them flattened and thinner!

The problem with desis is that they buy cheap thin steak pieces, then over cook them, so you can marinate it all you want, it's going to become a rubber.
Buy thick steaks, make sure they are at room temp before you grill them, don't poke them while they are on the grill, don't cook them with chicken and other stuff and under no condition try to eat them with roti.
Also, if you put it on direct heat it's grilling .. I have yet to see a desi dude bbqing a steak.
Okay here is my theory, first of all marination is the key for beef let it sit for a day for gr8 taste also if you grill teh steak it does not matter how long you marinate it for it would still be dry and i cannot eat dry meat ( thats just me ) so i tried not grilling it pan fry with very less oil after it was done i took it on the grill and grilled it for few minutes just to get the grill marks and to get the charcoal flavor in it turned out really gr8 and another secret is that if you want good steaks try to get Rib eye and Sirloin those are the best give it a try if you want pan fry and grill at the end for just a few minutes do not overcook it.
I had made steak myself with Mushroom Pepper sauce....I like to add some variety to the usual recipe since my family is desi too...but I know it turns good cuz Im cooking for a long long time! Here it is
You can change the measurements according to your taste. Also be a lil sure about the salt since tenderiser makes food a bit salty
Beef Steak pieces - 4
Olive oil - 2 tbsp
Garlic Powder - 1 to 1 1/2 tbsp
Meat tenderiser - little
Pepper Powder - 1/2 tsp
Mix all the powder with olive oil. Add lil water to make a smooth thick paste. Rub steak pieces with this marinade and refrigerate for atleast 6-8 hours.
I normally cook steak on non stick pan with some oil and cook them on low flame first and wen slightly colored and tender...I increase the flame to medium to cook evenly.
Meantime you can prepare the Sauce if you want.
Mushrooms - 1 cup, finely chopped (first wash then chop)
Peppercorn - coarsely crushed, according to taste
Flour - 1 Tbsp, mixed with some water
Butter
Soya Sauce
Salt
In a pan, melt butter and fry mushrooms. When properly fried, add soya sauce, lil water and salt. Mix well. Add flour mixture to the gravy. When its thickening, add crushed peppercorns. Stir well and pour it onto the hot steak!
our steaks never turn out yum. so i need some tips to cook em perfectly. remember, we are a desi family so we like our steaks well done.
so do you guys half-cook em before hand and then BBQ it? what temp should it be cooked at? what about any marinades or sauces? what's the rules/tip with them? should i put em in foil and then plop em on the BBQ?
My dad bbq's yummmmm steaks! i'll ask him and let you know :)
