JP G, whichever recipe you follow dont forget to add some ground raw papaya [about one heaped tsp in 1 kg of meat] to make the meat tender for the BBQ :k:

I am not too good with recipes anymore. but we’re in the bush over the weekend and I grilled some salmon for supper; for which I earned big applause.. :D
salmon fillets.
butter.
fresh chopped parsley.
fresh lemon.
garlic salt/chopped garlic or garlic powder.
white pepper.
Ground turmeric.
teriyaki sauce
Put all the seasoning on salmon, squeeze lemon juice and let it sit for few minutes. Don’t put teriyaki sauce, and parsley yet. Fire up the grill, and make sure it’s pretty hot, since you are going to sear the salmon, otherwise it may break apart. Put butter on fillets and toss salmon on the grill with skin side facing upwards( not on the grill). BBQ fillets till they are golden brown, and use butter as necessary. After about five to ten minutes, take salmon off of the grill. It will be still raw from the inside, but not to worry. Sprinkle all the herbs on top of fillets, throw some more butter, with some dashes of teriyaki sauce. Pre-heat the over to about 350 degree Celsius, and put your fillets in till they are baked. I like mine medium, so often at times, only the grill works fine. But, if you want to make’em well done..then oven does the trick. Happy barbecuing..

Kastoori Kabab
700.00 grams chicken breasts, boneless
1.00 tablespoon garlic paste
1.00 tablespoon ginger paste
4.00 tablespoon lemon juice
1.00 teaspoon white pepper
2.00 teaspoon salt
1/4 cup butter
3/4 cup flour
1/2 cup fresh breadcrumbs
1.00 inch piece ginger, chopped
2.00 - ground cardamom
1.00 teaspoon coriander powder
3.00 - egg yolks
1.00 teaspoon cumin seeds
1.00 teaspoon saffron (zaffran)
How to Cook:
1. Cut the chicken breast into 2 inch pieces. Place the chicken pieces in a large bowl. Mix salt, pepper, garlic and ginger paste with lemon juice and rub into the chicken pieces and keep aside for an hour.
2. Heat butter in a heavy based saucepan or karahi, Add flour and fry gently over low heat until light brown. Reserve about 4-5 tablespoons of the mixture and keep it aside.
3. To the remaining flour mixture add breadcrumbs, ginger, coriander, cardamom powder and chicken pieces. While stirring, cook for 5-8 minutes. Keep aside to cool.
4. Whisk the reserved flour mixture, cumin, saffron and egg yolk together.
5. Coat the chicken pieces with the yolk mixture and skewer the chicken pieces closely on metal skewers and grill over hot charcoal.
6. Alternatively, Place the chicken in a oven at 325F, (170C) or gas mark 3. Roost for 1 hour, turing once or twice to brown the both sides.
7. Serve with Nan, Poodinay Ki Chutney and Raita.

BTW/ There is a sauce served up in Upsate NY. Not buffalo but it is more sweet/tangy..hhoney mustardish. That is Da Bomb.

yaar try marinating cubes of meat in yogurt overnight and add to it all the spicies that you like, I also use red wine vineger. The yogurt will make it melt in your mouth.

New Potato "Chips"
Ingredients
4 New potatoes
1 tbsp Vegetable oil
1 tbsp Butter, melted
1 tbsp Cider vinegar
1 Clove garlic, minced
1/2 tsp Each salt and pepper
Procedure
Scrub potatoes; cut into 1/2-inch (1 cm) thick slices. In large bowl, combine oil, butter, vinegar, garlic, salt and pepper; add potatoes and toss gently to coat well.
Reserving butter mixture, place potatoes on greased grill over medium heat; cover and cook, turning and basting frequently with butter mixture, for about 15 minutes or until potatoes are tender and golden brown.
Serving size: 4 servings

Thai Beef Satay
Ingredients
1 lb. Fast Fry or Sirloin steak cut into long strips, 1/2 inch wide
3 tbsp. peanut butter
2 tbsp. EACH soy sauce and lemon juice
1 tbsp. brown sugar
1/2 tsp. EACH minced garlic and ground ginger
1/4 tsp. hot pepper flakes
Procedure
Soak wooden skewers in water for at least 10 minutes to prevent charring.
In medium bowl, whisk together peanut butter, soy sauce, lemon juice, brown sugar, garlic, ginger and pepper. Whisk in 2 tbsp. water until smooth.
Stir in beef strips until coated. Let stand at room temperature for up to 15 minutes.
Tread strips loosely onto wooden skewers. Broil or grill 3 to 4 minutes each side.
Serving size: 4 servings
Lemon Dill Halibut Kabobs
Ingredients
1-1/2 lb Halibut or monkfish fillets
2 tsp Grated lemon rind
1/4 cup Lemon juice
2 tbsp Chopped fresh dill
1 tbsp Vegetable oil
2 Cloves garlic, minced
1/4 tsp Each salt and pepper
Procedure
Cut fillets into 1-inch (2.5 cm) chunks; place in bowl.
Whisk together lemon rind and juice, dill, oil, garlic, salt and pepper; pour over fish and toss gently to coat .
Thread onto eight 8-inch (20 cm) metal skewers.
Place on greased grill over medium-high heat or under broiler; close lid and cook, turning once, for about 5 minutes or until fish is opaque and flakes easily when tested with fork.
Serving size: 4 servings

Garlic chicken
Amount Measure Ingredient -- Preparation Method
1 Cup Italian salad dressing
1 Ta Fresh Rosemary -- chopped or
1 Teaspoon Dried
2 Large Garlic cloves -- chopped
6 Chicken breast halves -- Skin, Boned
1 Red bell pepper -- quarter long
1 Green bell pepper -- quarter
1 Yellow bell pepper -- Quarter
Cooked white rice
Whisk dressing, rosemary and garlic to blend in large owl. Add chicken and all bell peppers and toss to coat. Let stand 1 hour or cover and chill up to 1 day, tossing occasionally. Prepare barbecue (medium heat) or preheat broiler. Drain marinade and discard. Grill or broil chicken and bell peppers til just cooked through, about 4 minutes per side. Mound rice in center of platter.
Arrange chicken and peppers decoratively around rice and serve.
whatever spices and herbs you use for marinading always remember to add some papaya......eith fresh or powdered. It really makes the meat tender.
