How about in spices - which ones do you specifically need?

I've got : crushed basil, crushed oregano, ginger powder, garlic powder, salt, sugar, pepper.

I was thinking about stuff like vanilla extract and nutmeg, but I don't see myself using too much nutmeg, and what the hell can you use vanilla extract in?

Anything I'm missing?

Is garlic paste the same thing as garlic powder, and can I use garlic powder in the stead of garlic paste?

i guess u could although i prefer paste over powder in saalan type of things.

desi spices that u must have would be red chilli powder, turmeric, corriander powder, garam masala powder, cumin seeds, crushed red chillies that go in pretty much every basic desi dish. For more advanced cooking u may want cinammon sticks, the big black cardamoms(sp) and the small green ones too, cloves, crushed fenugreek leaves and more but i guess u won't need them right away.

Desi spices: coriander, cumin, fennel, cardamom, turmeric, cloves, I use quite often

additional spices: cinnamon, rosemary, salt, pepper, crushed red pepper, oregano, basil, etc

Other stuff: all purpose flour, besan (no idea what the english version of that is), rice, daal, potatoes, yogurt, tomatoes (and canned purees), garlic, ginger ( prefer paste or whole to powder), onions

I also like to keep a lot of frozen veggies handy to mix into any dish for variety.

vanilla extract if you plan to bake from scratch.

actually i also like to keep some various marinades or stir fry sauces handy for flavor.

oh! and if you like, keep beef or chicken stock handy (those cubes). My MIL adds them to random dishes for a richer flavor. I use it in stews, but not much else. But she'll put it into stir fries, veggies dishes, etc.

Ginger garlic paste, tomato puree, basmati rice, pasta, fried onions (if you use them), spices like salt, blk paper, red paper, corriander powder, haldi (teramic powder) curry powder, knor chicken cubes, vinegar, soysauce, hot sauce, sugar, baking soda, potatoes, daals, cookies, and chocolates are some of the things you should always have in your pantery.
