So we’re having a barbecue at my place tomorrow in honor of me and my graduation
The menu is simple barbecue stuff… corn on the cob, roasted potatoes and peppers, mac and cheese, spciy cajun grilled shrimp, steaks, burgers, shish kebabs and boneless chicken breasts.
What kinda salad should we have? Im thinking coleslaw and a pasta salad… or should it just be one?
For dessert we’re having ice cream and a fresh fruit platter… anything else we’re missing? Drinks are covered… lemonade, iced tea, fruit punch, sodas, tropical drink concoctions…

I was going to say american potato salad but you’re already making roasted potatoes. Coleslaw sounds very good and maybe add some steak sauce and chutneys/ketchup?
You can add salsa with tortilla chips or light sandwiches for appetizers but you don’t really need to.

Oh the salsa and chips sounds good... I wanna do asparagus and portabella mushrooms too cuz I've seen and ate that at some bbq's but I havent the slightest clue how to prepare that... any help?

I haven't had asparagus with mushrooms but when I make asparagus, I just saute them in butter, garlic and season with salt and pepper. My personal fav to eat with steaks but I'm sure other guppans will post up better recipes! :)

Firstly, will all the guests be asked to wear a lunghi? Have a lunghi themed party...
Secondly, you are having mac n cheese, which is pasta, is it not? So have a fresh salad with lettuce, baby spinach, tomatoes, cucumbers, onions, olives, celery etc with a lemon dressing. It will provide a refreshing contrast with the rich meat, stodgy potatoes n mac n cheese. You can have coleslaw too (have both!). Have some mint chutney and fresh tomato salsa too.
Thirdly, am I invited?

I personally prefer pasta salad over coleslaw, but considering the fact that you are serving several other starches, I would go with coleslaw.
How about Caesar Salad or Garden salad? They are what I usually serve with the type of menu you noted above, but I know coleslaw is a favorite of many (just not me).

I agree with RupayHalwa and Diva girl. A garden-inspired salad will compliment your meaty menu. Mostly this is what I make for our bbq's. Chopped greens (mostly just regular lettuce), baby tomatoes, black olives, red onions, corn kernels (put these in the very end, just to give some color) and croutons. And then for the dressing just mix store bought balsamic vinaigrette and evoo. and obv, some salt n pepper. Works a charm each time.
