Lemon, ricotta cheese, almond cake I made for someones birthday. This is actually a
cup cake reciepe that I modified to make a nice dense yummy cake.

This recipe make nice dese but a bit crumbly muffins/cake, it is best ofr breakfast or with tea. If I am making this as part of breakfast when ppl are over I always keep softened butter with it, it melts right on the warm muffins and is yummy..
I also make these with whole wheat flour, sometimes I add cople of spoons of millet or 1/4 cups of quick oats. I also put oats on the top sometimes. I like the facyt that this is such a forgiving recipe, that I can play around with it as I like.
Lemon ricotta cheese muffins/Cake (I will add what modifications I do for a cake)
2 cups plain flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter ( for cake I add 2 more tablespoons of butter)
1 tablespoon lemon zest
1 cup ricotta cheese
1 egg
1 tablespoon lemon juice
1/2 teaspoon almond extract
1/4 cup sliced almonds
1 cup sugar
1 teaspoon sugar, extra to sprinkle on top of muffins/cake for a nice crust
1- Preheat oven 180 degrees C or 350 F
2- Whisk flour,baking powder, baking soda, salt in bowl
3- In a seperate bowl, beat in 1 cup sugar, butter lemon zest in until light and fluffy
4- Beat in ricotta then egg, lemon juice and almond extract.
5- Fold in dry flour mixture in ricotta mixture.
6- Divide batter into lined muffin tins, sprinkle with slivered almonds and extra sugar over all muffins
7- Bake about 15 - 20 minutes until lightly golden brown OR bake for about 40-45 min for the cake, I use 8x8 pan for this much ingredents.

I don't have a proper built in oven/range at home, I have been using my itsy bitsy tiny toaster/oven, I had to buy a voltage converter for it but it was worth it, atleast I was able to BAKE :)
I find a lot of the cakes I am making nowadays have bene cracking at the top( not that I don't like it) because of the uneven heating and the middle gets more brown than the rest of the cake top due to the heating rod in the middle of the oven.
