That’s always been my problem.
What size pan do you use? I use a 6" pan, which is the smallest i’ve seen..but I know what u mean about finding recipes, they’re just not made for small quantities :hinna:

You could half the recipe and use a smaller pan but make sure to check the cake earlier for done-ness. Alternatively, you can always freeze half the big cake for later use. Just thaw at room temperature before eating.

Hmm... raw egg whites :(
Use pasteurized egg whites. There are also egg white substitutes around but i have never used them for buttercream so cant vouch for them.

ok u bakin queens.. i have a qs. so far ive made brownies and a pineapple upside down cake and it was yummy. ive made brownies 3 times.. the first time they burned like koyla.. cus i have the fire up and down both.. second time i did only down and when it was done i put on the fire in the upper portion for few mins... so when u bake cakes or chicken or anythin should we only have the fire down?? or is it only meant for cakes:??? please help me with this...

I use a 9’’ pan, which is great if its made for a gathering or so, but for family alone, too big!

why are you broiling your cakes?? sorry but lol that's really funny :p
you only need the oven to be on, NOT the broiler, which means only heat from the bottom.

that wasnt funny!!! :P i was a first time baker so obviously didnt know. so the place, upper one, from where we get fire is called broiler??? so do u guys evern put the fire up while bakin cakes or in the end like i did for few mins so we get the golden color

Ira I used wilton yellow cupcake recipe had sour cream, whole egg, and other basic ingredients etc. It was my first time baking cupcakes, so i messed up :( i used all purpose flour (maida) indian brand instead of cake flour, so cupcakes were hard like rock didn't rise either.. could you please share your recipe here.
oh btw i made swiss buttercream and it came out great, so i m good at buttercream..lol.

oh when it says beating the mixture does that mean electric mixer or beating by whisk. i used electric mixer in whole process

same if your cupcakes didnt rise, your ingredients could be old? I have tried Rose Levy Berenbaum's recipe for cupcakes and they turn out good for us. If you dont have cake flour you can always substitute all purpose flour with corn flour. I think i posted the recipe here last year, it also has sour cream, eggs, cake flour etc. Let me look for it again.
Btw, for buttercream, there is no way you can make swiss buttercream with a wire whisk, it requires a lot of beating.

no broiler usage during baking. :p
the golden colour from the cake comes from baking. trust me, just having the oven on bake with the heat coming from below is more than enough.

sometimes overmixing can cause flat cakes too because you beat all the air out of the batter. try to mix the ingredients until just combined.

but since ive heard nahi chalana the broiler i tried the chocolate eclairs MAAAAA they turn out awsome well i will do thanku for the tip and letting people know …thanks:)![]()
