i discovered this thread yesterday, went through all the pages and I must everyone is amazing but Mehnaz ur super talented!

I have a question, it has probably been asked before but anyway: How do u make ur buttercream icing Mehnaz? How much icing sugar do u add? Isn't it like way too sweet? And what about the consistency? Cheers!

^Yes can someone please share their tried n tested butter cream recipe…I am taking a Wilton course and the recipe is so sweet that its almost inedible…

Ok I made a cake today for my sister’s birthday. The plan was to sandwich a rainbow cake in between a chocolate cake. The filling for one half of the cake was chocolate fudge, and for the other half was supposed to be cream cheese frosting, but because I wasn’t clear about how to make the frosting, I used plain whipped cream… which didn’t work because it kinda melted and became a bit runny (even though the cakes were cooled down well… I guess it was just the room temperature that was enough to melt the cream)… So anyway you can see the two halves below…

But I do have a few questions after making that cake:

1: As I was placing the chocolate fudge frosting on the cake, the crumbs kept on getting in the way! I kinda had to apply some force to spread the frosting evenly but the cake was so soft that the crumbs kept breaking off, especially from the sides (thats why I didn’t put any on the sides of the cake)… how do you deal with this? I’ve heard of crumb coating but don’t really know how it works…

2: I had my own recipe for the rainbow cake, didn’t measure a single thing, just worked by andaaza and I think I put too many eggs ( 6 small eggs) … can eggs make a cake a bit stiff? Like the rainbow cake wasn’t as spongy as the chocolate cake… it was more… glued together?

3: Still looking for a tried and tested cream cheese frosting recipe thats not too sweet.

4: Anyone ever made fondant at home? Its made out of marshmallows… and marshmallows contain gelatin .. so is fondant not haram? … Or is there halal/vegeterian versions available?

Barbie, Im not sure if the frosting on the following link is exactly what you are looking for but have a look.

I have tried it and it turned out great. I dont like making frosting with powdered/icing sugar because they always turn out way too sweet. I always used whipped cream for everything, I make it out of whipping cream. The link i posted is a whipped cream frosting but has cream cheese so its more sturdy and its not too sweet.

yayayayaayyy thank you saraaaaa :hug: this is exactly the kind of recipe I was looking for! Something thats thicker and more stable than whipped cream but doesn’t use icing sugar! Awesome, thank you!

BarbieCue I make this cream cheese frosting and it's pretty good.

300g icing sugar, sifted
50g unsalted butter, at room temp
125g cream cheese, cold

Beat icing sugar and butter together with an electric mixer (medium speed). Add the cream cheese and beat it until completely incorporated.
Change the mixer to medium high speed and continue mixing until frosting is light and fluffy. Usually about five minutes.
be careful not to over beat or the frosting will go runny!!

This makes enough for 12 cupcakes. Double the quantities for a 20cm cake.

here’s my first attempt at deocrating…

I didn’t follow any specific design template so that’s why it looks kind of random…but I prefer asymmetrical designs more than the centered ones so I was okay with just placing the stuff on.

Nice!!! Are you artistic? Were the flowers hard to make? I’m asking because I have no artistic bone in my body but would love to try something like this…I’m wondering if you just need to have the talent…or if its duable for someone like me…

I think anyone can do it........because I don't consider myself in the least bit artistic.
The small flowers were not hard to make.....keep in mind that they are not perfectly made.....they shouldn't have the points that stick up from the petals. This was because the consistency of the icing was not 100%. I'm sure that with practice I will get better and will have an increased understanding of what to do and when.

But you can do it......honestly.....you can.
