What kind of bakeware is best for a beginner?
glass , metal, ceramic, or those light non-stick ones?
How many different dishes are normally needed, for light/moderate baking? eg/ heating up pizza, baking cookies, a simple cake, making lasagna, etc?

You need three things for things you mentioned above. Get a pyrex rectangular casserole dish, it’s microwave/oven safe and is good if you want to make lasagna and many other dishes. For other baking you need a 9’’ non-stick springform cake pan(Bakeware - Pizza Pans, Pie Plates and Bakeware at Kohls.com) and a non stick cookie pan/tray. I think you can get good deals for casserole dish and cookie pan from Walmart.

Im a beginner myself and usually buy the light non-stick ones from dollar store :D esp the cookie sheets and cake pans. And everything turns out perfect :)

For roast veg, fish pie, lasagane etc I use a ceramic roasting dish. Works very well or a Pyrex oven dish.
Baking- I use standard baking tins and for cupcakes/buns I use silicone holders.
