Ingredients:
Eggs 6 separated egg whites and yolk
Ricotta Cheese 3/4 cup
Sugar 2/3 cup
Almonds 1/4 cup
Milk 1/4 cup
Vanilla Essence 1 teaspoon
Oil for baking pan
Method:

Grease a 7 inch square cake tin. Put egg yolks and sugar in a bowl and beat together until pale and fluffy. Add ricotta and beat until smooth, add milk then stir in the almonds and vanilla essence.

Using an electric whisk, whisk egg whites until thick and creamy. Carefully fold into the yolk mixture.

Pour into a prepared tin and bake in the oven at 350F for 30 to 35 minutes or until a knife inserted in the centre comes out clean. Cut into squares and keep in refrigerator, serve cold.
