baingan/eggplant

What is your favourite method of making baingan?
We usually boil them, make the usual masala and then cook smushed baignan, cubed aloo and the masala together. You can add achar ka masala for that khatta pan.
Anyone have a tried and true recipe for bagharay baingan?

Mine is making a cold baingan ka bharta!!!!!!
yum yum, its really tasty with chopri rottis!

Someone here posted recipe for 'Burhani', an Afghani dish made with fried eggplants and yogurt. Its very simple to make and taste nutritious and delicious.

Basically, you cut baingan in half vertically. Then cut half inch slices. Put some salt and red chilli peppers and let is sit for 5 minutes while you heat up oil in a frying pan. Fry the slices.

Separately, mix yogurt with salt and black peppers.

Add fried baingun slices on to yogurt.

Eat with naan or rice or on it's own.

Hmm...sounds great ;)

Baigan raita,
slice and fry and put into seasoned dahi.
