I made this over the weekend and it turned out super awesome , absolutely beautiful mix of potato, cheese and chicken , do try it
Boneless chicken about 3 inches cubed . Boil in two cups of water , add in one heaped tsp each of onion powder, garlic and ginger powder .. boil until fully done and soft .. if you have any herbs at home , add half tsp of it while boiling it. A tiny bit of salt as well. Shred half of it and the rest of it cut into bite sized pieces . Keep aside
Prepare White sauce :
Mix 3 tablespoons maida in half cup milk until smooth, add in a tiny bit of salt, a pinch of herbs, one and a half tsp curry powder. Heat three tablespoon oil, add this to the pan and start whisking it fast using a whisk. add in the chicken stock in which you boiled the chicken pieces, Add in half cup shredded cheese and as soon as it melts , add in the above kept chicken pieces into the sauce .. stir , leave for 2 minutes and keep aside.
Boil pasta , I chose the soup pasta , you can use macaroni if you like , about two cups of it. drain and keep aside.
Preparing the pasta sauce :
slice a large onion, fry it brown, add in one tsp garlic,add in two cans of tomatoes. Throw in 4 slit green chilies, some fresh coriander leaves, fry it all for at least 15 minutes on medium high heat. Then add half cup of fresh double cream. cook for five minutes and just before taking it off the heat, add in half tsp soya sauce, half tsp vinegar .. let it cool and then blend it into a fine paste. Add in the pasta , and keep it aside.
Boil 6 potatoes, mash them, add a tiny bit of double cream, a bit of salt, one tsp onion powder , mix and leave aside.
In an oven safe bowl, layer it first with the chicken mix, then pour the pasta on top, then carefully layer mashed potato and sprinkle a handful of shredded cheese on the top. Preheat oven to 180 degrees and keep this casserole in the oven , covered with a foil paper for the first 20 minutes and then remove the foil and give it another 15 minutes until cheese starts getting color ..
