Does anyone have good (tried and tested) arabic recipes for shawarmas, kibbeh, salads, tabouleh, rice, stuffed grape leaves…etc etc…
FATTOUSH (Arabic Salad). THIS IS A DELICIOUS ACCOMPANIMENT TO ANY ARABIC MEAL!!!
CROUTONS
2 Pitta bread cut into small squares.
Sunflower oil for deep frying.
SALAD
Half a head of iceberg lettuce, chopped small.
A bunch of fresh FLAT LEAFED parsley, chopped. (A bunch that can fit in your hand)
2 tomatoes, diced.
Half a small onion, sliced.
Half a cucumber, diced.
Half a green pepper, thinly sliced.
OPTIONAL a stick of celery, sliced.
DRESSING
1 teaspoon of sumac (its like a pink powder, made of dried sour berry things)
half teaspoon black pepper, crushed.
Half teaspoon of Zatar (middle eastern oregano - it has a milder flavour and bigger leaf)
Salt to taste.
Juice of 1 fresh lemon.
Half teaspoon vinegar.
2 tablespoons of olive oil.
Deep fry the pitta bread squares until golden brown and drain.
Mix all the salad ingredients together with the dressing, taste and season again if necessary.
Top with pitta croutons and mix at the table, otherwise they will get soggy.

i love arabic food, however i do not have any recipies. my mom is the one who makes nice filafels and stuff at home:yummy:

hey rupayhalwa thts the real authentik recipe of fattoush...i reli lyked tht fact tht atleast sumone knows how to make real fattoush...i feel lyk kicking those ladies who make crap on television n shows the viewers as if there recipes r authentik!

BR - U can find Sumac in middle eastern stores. I'm not sure if the local desi shop will stock it, u can but ask.
These days even large supermarkets sell sumac in the ethnic food section in UK, i dont know where u r based so wouldnt know if u got it there.
It will still taste good without sumac, but the sumac gives it this slightly spicey sour kick.

US...though ive never heard of sumac and havent seen it in the grocery store---yeahh UK is wonderful for International cuisines:D:D
ARAYES - its a lebanese starter, consisting of the flat arabic bread (like pitta bread or khobs) stuffed with minced lamb / cheese. It is definitely better to use the cheese.
6 PITTA BREADS
STUFFING
HALF KILO OF MINCED FRESH LAMB
HALF AN ONION CHOPPED
1 CUP CHOPPED FLAT LEAF PARSLEY
2 CLOVES GARLIC, CRUSHED
2 GREEN CHILLIES CHOPPED
HALF TEASPOON GROUND CUMIN
TEASPOON CRUSHED BLACK PEPPER
1 TEASPOON OF SALT (OR TO YOUR TASTE)
A LITTLE BIT OF FRESH GREEN CORIANDER
JUICE OF HALF LEMON
1 INCH CUBE OF BUTTER
Optional - 1 CUP GRATED MILD (NOT MATURE) HARD CHEESE, LIKE CHEDDAR
SOME BUTTER FOR SPREADING ON TOP
Heat oven to 220 degrees C
Put all the stuffing ingredients (except cheese) in a blender and blitz until a smooth paste is made.
Heat pittas up, enough so that they puff up slightly.
Cut eat pitta in half and open to form pockets.
Stuff each pocket with a tablespoon of the lamb paste and spread out.
If using cheese, sprinkle cheese in a layer on top of the filling.
Squash the pitta pockets so they are closed flat.
Spread thinly with butter and oven bake for approx 10 - 15 minutes.
When they are cooked within and golden on the outside, they are ready to eat. Eat fresh out of the oven.

^ im looking for one too.......the outside part is easy--pita bread
hummus (ready made or crushed chickpeas with tahini, olive oil, lemon, garlic powder, and paprika sprinkled)
olives, lettuce, greek peppers, tomatoes, onions (in vinegar)
the yogurt can be made with salt, pepper, a teaspoon of mayo, cucumbers, and dried mint.......
hmmmm i just dont know how to marinate and make the chicken/meat properly.....
