u can do with it whatever u like....
only the qurbani given in hajj as kaffarah for missing rituals in hajj/umrah r to be distributed among poor and not kept for one's own eating....
also those that r given as qurbani from the will of a deceased person or qurabni given as a "mannat"....
other qurbani including aqeeqah can all be eaten by you and your family/friends without giving out parts to the poor....
but its good to give a part to the poor as well, just to add to your hasanaat....
for some qurbani (like walimah) its preferred to cook and make a party....
to note: its not necessary to make 3 portions as most of us assume....
one may consume all by himself or give all to charity....
but i think its a good tradition to part something for the poor....
