Apricots Season

I love these fruits and since I am getting some kilos of fresh riped apricots, direct from someone’s garden, I was thinking of making some good old grandma’s recipes like apricots marmalade, compost, cake, pie.

Any recipes or ideas appreciated on how can I preserve the apricots and enjoy them longer ?

In 1988 I went to Quetta to see my aunty (Khala) they had several apricot trees in their garden ... i must admit I spent the whole month of august - sitting on those trees eating apricots ...

Fresh Apricot Pie
8 servings
1 package (15 ounces) folded refrigerated pie crust (2 crusts)
5-1/2 cups sliced fresh apricots (about 2 pounds)
1 cup sugar
1/2 cup all-purpose flour
2 tablespoons unsalted butter, cut into small pieces

1.Preheat the oven to 375F. Unfold 1 pie crust and place in a 9-inch pie plate, pressing the crust firmly into the plate.

2.In a large bowl, combine the apricots, sugar, and flour; toss gently then spoon into the crust and dot with butter.

3.To make the lattice top, use a fluted pastry wheel or sharp knife to cut the remaining crust into long 3/4-inch-wide strips.

4.Arrange the strips first in one direction across the pie then in the opposite direction, using longer strips near the center of the pie and shorter ones near the edges. When all strips are in place, trim the crust all around and press firmly around the rim to seal the crusts together. Flute the crust, if desired.

5.Place the pie on a foil-lined baking sheet and bake for 50 to 60 minutes, or until the crust is golden and the juices are bubbling.

Najim, must have been fun, in 1988 I was in pakistan too. :slight_smile: I used to visit my grandma’s sister on her watermelon farm and our own garden in village, it was fun to climb trees.
