Apricot chutney - recipe needed

I need a simple recipe for apricot (khoobani) chutney. I’ve searched some recipe sites but they are so difficult and need hundreds of ingredients, so if you have a tested ‘simple’ recipe please post here..thanks

Found one myself!! hmmmph :-D

here it is if someone needs it...

Ingredients:

360 gms Apricots (Khumani)
1 cup Vinegar (Sirka)
2 cups Water
2 tsp Salt (Namak)
1/2 level tsp Red chili pepper (Lal Mirchi)
2 big Cardamom (Elaichi Moti), crushed
1/4 kg Sugar (Cheeni)
2 tea-spoons long strips of ginger
1 clove garlic, chopped
4 tea-spoons raisins
8 blanched almonds

How to make apricot chutney:

* Put apricots in boiling water till soft..
* Peel and mash the apricots
* Strain the pulp and wash the stones of apricots with one cup of water.
* Cook apricot pulp, ginger, garlic and water of washed stones, almonds and raisins till all the water is absorbed.
* Add vinegar, sugar, salt, cardamoms and red chili pepper and cook till is thick and golden brown
* Put it in jar. This can be kept for one year..

actually I just realized i was thinking about peaches...instead of appricot....lol...

peaches--- peeled and cut into cubes
salt
red pepper
sugar or brown sugar
lime/lemon juice
lime/lemon zest
little orange juice
little katchup
cinamon stick or powder
chaat masala.

Combine all the ingrdients in a pot and leave the whole thing on mediumish heat... stir ocassionally... soon sugar will turn into liquid, juices will start come out from the apricot.. let the thing cook till it gets thick. You might want to use a potato masher kind of thing...it will help break down appricot....

take sum dried khoobanis
wash them n then boil in water.
wen become soft after 15-20 mins usually.
wait untill it becomes cold....put all in the blender and grind until smooth texture.
turn off blender.
again on stove now u add sugar, salt n red pepper...sugar shud be more than other two.
boil it until ur desired thickness.
cold chutney serve n u can save it in an airtight bottle or jar for many days.

i use to make it for dahi bhally and diff types of chaats and yes for sweet potato.
