I love mango chutney with pretty much all desi food… especially the sharwoods range… with Bengal Spice… hmmmm drool
Unfortuantely im in a part of the world right now where there is no sharwoods And mango chutney is pretty much unheard of… But there are magoes… and mango pulp
Anybody have any good recipes on how to make mango chutney?
6 firm half-ripe mangoes, peeled and thinly sliced
1 cup cider vinegar
1 cup packed light brown sugar
2 tablespoons minced garlic
1 2-inch fresh ginger, peeled and thinly sliced
1 tablespoon cayenne pepper salt and freshly ground pepper
In a large skillet bring all the ingredients to boil, over medium heat. Reduce the heat to low, simmer for 25 to 30 minutes, stirring constantly from sticking to the bottom of the skillet. Remove from heat and let the chutney cool before serving. Always keep it refrigerated.
sweet one
2 lbs. half-ripe mangoes
10 c. water
6 cloves garlic
2 1/2 c. vinegar
4 oz. raisins
4 tbsp. salt
2 oz. fresh ginger root
1 lb. sugar
1/2 tbsp. chili powder
1 1/2 tbsp. garam masala
Peel and cube mangoes. Make brine from the salt and water and soak mango pieces in it overnight. Next day, drain well and dry. Peel ginger and garlic and chop very finely.
In a heavy glass or enamel pan, dissolve the sugar in the vinegar, bring to a boil and simmer 15 minutes. Add mangoes, ginger and garlic and cook for another 15 minutes, stirring constantly, before adding the remaining spices and raisins. Cook until the mixture thickens, remove from heat, cool and bottle in airtight, sterile jars
