how about a cold chicken salad? Chop the chicken, add mayo, onion or scallions, salt and pepper - you could spice it up with curry or whatever spices you like and either make nice sandwiches or serve it over a bed of lettuce with sliced tomatoes, hard cooked eggs, pickles, olives on the side.
Or...you could buy a pie-shell, chop the chicken, add some chicken gravy, diced potatoes and carrots, peas and voila, chicken pot pie.
