Any ideas of what to do with leftover rotisserie chicken?

Hi all!

Anyone have any tasty ideas of what to do with leftover baked or rotisserie chicken? any responses are welcome!

how about a cold chicken salad? Chop the chicken, add mayo, onion or scallions, salt and pepper - you could spice it up with curry or whatever spices you like and either make nice sandwiches or serve it over a bed of lettuce with sliced tomatoes, hard cooked eggs, pickles, olives on the side.

Or...you could buy a pie-shell, chop the chicken, add some chicken gravy, diced potatoes and carrots, peas and voila, chicken pot pie.

You can shred the chicken and use it in:

1) stuffed pastries. Or samosay/egg rolls.

2) chicken salad. Vary the salad. U can use it in a non-pasta salad one day. And then in a creamy pasta salad the next day.

3) chicken sandwiches. You can make chicken and mayo sandwiches. Chicken and cheese sandwiches. Grilled cheese and chicken sandwich.

5) soup. Chicken noodle soup or chicken corn soup for example.

6) combine the shredded chicken with mashed boiled potatoes. Add 1 finely chopped onion and seasoning (garam masala, chilli powder, salt, zeera, corriander seeds). Mix the mixture well. You can dip in beaten egg.....coat in bread crumbs......and fry. You're basically making potato and chicken cutlets.

7) Pizza? Use the chicken as a topping.

8) Stir fry. Combine it with mixed vegetables. Add soy sauce or sauce of your choice. OR.........buy the frozen vegetables that come with the sauce....and then add the chicken while you fry them. It only takes a few minutes to cook it.

9) Make a desi salan out of it. Add chopped onion, tomatoes, garlic, masala....and make a gravy to go along with the diced chicken.

10) Use it in casseroles like lasagna. Fry the shredded chicken up a bit. You can add spinach or mushrooms to it. ANd then layer this mixture in conjunction with lasagna noodles, tomato sauce, and cheese.....and bake.

^ Ooh, good one.

You can also use the chicken in omeletes and crepes.

option 1, 2 and 3 from rv will be the best IMO

Use them as:

Pizza toppings

Chicken salad - chop with veggies, mix with mayo, add some salt and pepper

Stir fry with some asian veggies

Stuffing in quesadillas with mozzarella and cheddar cheese

Samosa and egg roll fillings

Chicken puff pastry - just get yourself some fillo dough
