Resorting to changing one's phone number is reserved for entanglements with psycho stalkers.
She probably hasn't changed it because alot of her friends and family have her number, and unless her life is in danger, (i.e. from said psycho stalker), she wouldn't think to change it.
Good new is, she doesn't think of you in the pscyho stalker category. Be happy about that. And don't give her any reason to change her mind.
