Re: Amazing Dumm keema recipe
So, this is the recipe I use, and to me it tastes just like the one I have eaten at our Memom/Karachites friends houses.
1lb keema
1 tbsp Meat tenderizer
1/2 box SHAN bihari kebob masala
1 cup full fat yogurt
1 tbsp ginger/garlic paste
1 large fried onion
Method:
-
Chop onion finely and fry until it is dark brown. Take them out on a paper towel, let them cool, and then crush them.
-
In a large mixing bowl put all the ingredients in (EVERYTHING listed above), and mix well. Cover with plastic wrap, and put in the fridge for at least 4 hours or overnight.
-
When ready to cook, heat 1/4 cup oil in a karahi/wok type pan. Add the keema mixture and mix around. This step is going to take about 30-45 minutes. During this time, your keema mixture is going to become liquid, but dont freak out…it will dry up.
-
In the mean time, heat up a piece of coal. When the keema mixture is dry, make a hole in the middle, put a piece of aluminum foil in it. Put the coal on the foil and put a few drops of oil on top of the coal. As soon as you do that, put a tight lid on the karahi/wok. Leave it for about 6-7 minutes.
-
put keema (without the coal of course) in your serving dish, and garnish with onions cut into rings, and coriander/cilantro leaves.
TIP: I use the coals that are meant to be used in Hookahs. I buy them at the Arab grocery store.
Re: Amazing Dumm keema recipe
yea those artificial koila …no no… it leaves the flavor of chemical in the keema.
Saimab33, thanks for the recipe. and for the tip.

Re: Amazing Dumm keema recipe
khatti gave me a recipe for this one time and the flavour turned out pretty good. I liked that the recipe didn’t use packaged masalas since I don’t like to use them.
The only issue I had with it was that it didn’t turn out as soft as the keema I’ve had it some other peoples houses. That could be because I used extra lean keema or maybe I overcooked it. Try asking her.
