Which one is a better option for desi cooking?
I have aluminium one at the moment , but I feel water dries up pretty quickly in it ..
Should I opt for a steel one?

I never used pressure cooker
I went through 3 aluminum presurre cooker in 4 years. And I have had a smaller stainless steel one for 5 years and still going strong. Stainless steel one does seem to have a thicker base than aluminum one and they do typically last longer. The majestic brand from Pakistan is pretty good.

Bhabhi uses Aluminum cooker and she says it’s better. i brought a 5 litre “Prestige Pressure Cooker” from India at the beginning of this month.
aluminum is better for bhoonofying i suppose.

I got an aluminium one from Amazon.com. Love it.
I’ve had a steel one before. I think I prefer aluminium. I feel things stick less.

I have an aluminium one and am using it successfully since 7 years mA
I have a stainless steel Fagor pressure cooker…loooovveeeee loovveeee loovveeee it. I’ve only used it for daal and ocasionally for meat (quick goat salan for guests coming over)…and it has worked awesomely. I have never made haleem or shami kebab…so idk how it will be as a heavy duty pressure cooker…but for daals and salans…it’s great!
My aluminum pressure cookers have been local Canadian brands if that makes a difference

I feel though, that water dries quicker in the Aluminum PC.. has anyone else felt that?
I am a little confused by the question. Water boils at a certain temperature. Different metals heat up at different speed and have differing heat conductive characteristics. That can be manager by adjusting the heat level. The second thing to look at is the pressure valve and whether it is letting out more steam or sooner than it should.

its a fairly new PC , X2 .. I dont think its the valve issue , might be the heat issue , I do keep it on medium high so the pressure gets built up faster .. I wonder if that is the case why water dries up quicker ..

I have never used pressure cooker but I was just wondering that now a days it is always discouraged to use aluminium utensils for cooking so why using aluminium pressure cooker is ok ?

I had an aluminium pressure cooker, but switched to stainless steel and couldn’t be happier. The aluminium one was very tough to clean, and after a few years it got mis-shapen and would wobble on the stove. I got a flat bottom stainless steel cooker that is super easy to clean (no hand scrubbing required on most days, I just toss it into the dishwasher) and has retained it’s shape after 4+ years. As far as taste goes, I’ve never really noticed a difference.

that’s why, i think, the stainless steel pressure cookers are NOT good because it’s NOT good for bhoonofying the meat…no?
