Ok this is what you do :
Boil two to three large potatoes until they are soft but not too soft. Peel them and cut them in tiny cubes …
Then finely chop half an onion and keep aside , chop two to three green chillies and keep aside … chop half cup fresh corriander and keep aside …
Now, in a pan, heat one teaspoon oil and add half teaspoon zeera to it.. when it starts sizzling, add the onions , until they are slightly brown, add quarter spoon garlic if you like the garlicy taste … then add the cubed potatoes , salt to taste , red chilli powder to taste , garam masala … dry methi leaves or fresh leaves … and start frying the potatoes for a bit … about 5-10 minutes later , add the green chillies and the dhaniya … and let it be on dum for 5 minutes .
Finally when the mixture cools , mash it with a fork or the masher …
Now , to goondo the ata … take two cups flour , and start mixing water in it until you cant see the dry flour anymore … then leave it aside for 15 minutes … finally , start goondo the ata and it will take you a minute to goondo it into a fine dough.
make two small balls … roll one of them out into a roti, apply a layer of butter on it , sprinkle some dry ata on it and fold it nicely into a square … do the same with the other ball… then roll the first one again into a roti and fill it with potato mix … put the second roti on it make sure you close the ends carefully.
Then heat a tawa … add one teaspoon oil .. when its hot, put the paratha on it … and immediately pour one more teaspoon oil on top of the paratha … when the first side is done ( takes just a minute ) flip it and let the other side cook.
Paratha is ready for you to enjoy ![]()

Filling:
Boil and mash 3 large potatoes or 4-6 medium potatoes
Finely chop 1 medium onion
Chopped dhania
Chopped green chillies (a few...according to taste)
1 teaspoon garam masala
1 teaspoon chilli powder
1 or 1 1/2 teaspoon salt (according to taste)
You're going to mash the boiled potatoes and chopped onions. Add the dhania and chopped chili and mash. Then add the seasoning (chilli powder, garam masala, salt) and mash some more, lol. Once everything is mixed, you've got your filling. This is the same filling that we use to make aloo ki tikkiyan.
As far as the roti turning out "thick"...it's going to be thicker than regular roti because it contains a filing. To thin it out, you need to roll it more with rolling pin. Sometimes the roti might a hole or two it in it...no big deal. Roll it out to the consistency you want. Aloo ki roti tends to be bigger than a regular roti...so if you keep it small...it'll end up being thicker. Make it bigger...and it'll thin out. Or use less dough.

Keep rolling it to thin it out. Make sure you don;t put too much of your potato filling in to it as it'll cause to stick a lot more on to your work surface. Use plenty of flour to keep it from sticking too.
My mum makes my aloo paratha crispy for me as I don't like it otherwise :D
