I suck at making allou gosht. It seems like the whole world can make it except for me ??? What am I doing wrong ??? I cooked it yesterday…it turned out like crap. The salan was mainly like a tomatoe thick gravy. I put 3 spoons of oil and couldnt see any of it in the end. My beef got over cooked and I added potatoes too late.
1 onion 4-5 cloves of garlic and a piece of ginger... boil them together in a little oil, with haldi, namak and corriender powder. When they seem a bit tender, turn off the heat and put it in the blender along with 1/2 cup yogurt... blend until smooth.
Pour back in daigchi, add a bari ilaichi, 4-5 black pepper, 2-3 cloves, 1 pc cinnamon stick... add gosht and some water, let it cook until gosht is donewhen its reduced and thickened, add 4-5 tbsp oil and bhoonafy. i prefer making it in non-stick pan so that less oil is used. When the oil seperates completely and the masala is well cooked and fried.. add red chilli powder and again bhoonafy...
add potatoes... bhoono and then add water. cook till potatoes are done.
at the end add whole green chilli and dhaniya leaves.
i make mine in the pressure cooker and i put everything together including potatoes, meat and masalas....and then later i bhonofy it to make the gravy of a normal consistency...i made that just few days ago and it was good. Right now...i don't have beef otherwise i would have made that with photographs... i can show you how to make it next week with chicken...if its ok with you.
i too make it in the pressure cooker,but i add potatoes later otherwise they get too mushy and dissolved in the gravy....
if u want a gravy of thin consistency try to use less onions and tomatoes.....
