So I am cooking allo gosht for my in laws for the first time using a pressure cooker and that too for the first time. The gosht galaying part was okay!! Now i have bhoonify the masala by taking out the botiyan added yoghurt and bhoon it for like 10 mins.. As i cant let the meat in as it was already totally gala hoa.. I didnt want the meat to come off the bones and look like a haleem. Now I added the meat to the masala and stirred it well for 2 mins.. It still smells bad.. Tastes finr but smell is bad.. How do i take that smell out

Add bay leaves and garam masala and let it boil for 7-10 mins, you can also add star anise to get rid of bad smell and even choti illaichi. However garam masala is best option and bay leaves too!!! Good luck

Next time after frying the onions add the meat and wait to all the water dries up then add zeera, cinnamon stick, elachi, etc. Then add ginger garlic paste. The water that realeases from the meat usually gets rid of the smell and the garam masalas add a nice aroma.to the meat

Next time when u cook
wash the meat with vinegar. then when u boil add cloves,blackpepper, ilaichi, cinnamon and a little ginger
