Alloos in salin

Is this just happening to me or to anyone else?

Whenever I make a salin where I add potatoes (ie. channay, gosht, chawal, or aloo gobi like anything), they taste ok the day I make it, but the next day, they not only look weird, but taste weird as well.

I thought it might be because of the starch or something so I started soaking them for a while…but the same thing is happening. I use either yellow or red potatoes.

I don’t remember my mom doing anything different to the potatoes while cooking and those tasted fine for a good 3 days.

WTF is going on?

I think it depends on the freshness of the potatoes. I have it too sometimes (they taste yuk the day after) and sometimes they stay good for a few days.

Don't know the reason behind it :-/

I always throw out the day old potatoes from the foods that I cook. They're best when cooked fresh and eaten within a few hours. Once they go cold, they change consistency.
