al baik chicken and garlic sauce...questions about saudi food

i enjoyed a lot of good food on hajj…anybody here live in saudi, their fried chicken from al baik is soooo yummy you forget about kfc, anybody have any idea how they might make it the garlic sauce was really good, does anybody know how its made?. and their was also a traffic light type of smoothie sold everywhere with distinct layers of different flavors, how do you make that?

that garlic sauce is also in the shawarmas in saudi......which sadly I haven't seen in the shawarmas in the US (not where I live anyway). You mostly find mediocre shawarmas with a tahini sauce. Or if they do make the sauce close enough...something else is off with the shawarma.

Al baik user Broaster which is a patented machine and it is sold only for commercial use there is no home version of it. You can read more about it by googling Broaster at their site.
I have enjoyed that garlic sauce at a small chain of shawarma seller back in California . There is a food chain in North Carolina know as Showmars they have very good garlic sauce. They serve it with fish on pita.

Don't recall Al Baik.....when we used to live in Saudi.....we'd often have broasted chicken from Quickmeal or Abu Nawas. And the best shawarma place ....which is still there after all these years....was in the middle of a bazaar...called King of Juice. Should have been called King of Shawarma.

I was raised in saudi arabia...and had al baik almost every weekend for 18 years ..... I miss it alot ... tried many recipes for broast but no luck... however i can give u a garlic sauce recipe which is almost same in taste but u cannot get it right in ur first try... u have to try it few times and adjust the ingrdients , ok here is the recipe
Ingredients :
Yogurt half kg ( the taste sould not be sour or sweet... its best to buy some brand like nestle yogurt )
Boiled potatoes 3 medium sized
1 garlic bulb whole
1/4 cup oil
1/4 teaspoon salt

use a blender jug for best result ( do not use hand blender ) . In a jug , put yogurt,potatoes,garlic and start blending, while blending put oil slowly like very thin stream of oil continuously .... keep blending until u get a smooth texture in the end put salt according to taste and blend for a minute .... its ready.

funny story - I thought "baik" meant chicken until a local corrected me and told me that it was a family name of business.
