I have heard in various talks that animals would not be ressurected; whereas Humans and Jinns will be.
I have not been able to find anything in Quran that says that animals will not be Resurrected.
Here is the Sura that states “..wild beasts are brought togather”. Similar sentence is used to indicate the ressurection of Humans and Jinns in various Suras.
Sura 81 “Al-Takwir - The Folding Up”

When the sun is folded up; when the stars fall down and the mountains are blown away; when the camels big with their young are left untended and the wild beasts are brought togather; when the seas are burning and men’s souls are reunited (with their bodies);

Verse: 81:1
Does this mean that animals will be ressurected (like humans and jinns)?

Yes they will be, however they will not be judged. THe only purpose they'll serve is the retribution they deserve. They will tell Allah swt about the torture, or death that they have had at the hands of the Humans, and then they will turn into dust. And then Allah swt with deal with those humans that the animals have complained against.
