Afghani Pulao Recipe!

can someone please provide a step by step recipe of afghani/kabuli pulao? i had it for eid, but the person who made it did not care to share her recipe :frowning:

this stuff is divine! i want to make it, but need your help!!

Afghani Pulao Recipe

Description:
A non-spicy rice dish, very yummy! Got the authentic recipe from an Afghan friend.

Ingredients:
1 large onion chopped, chicken or mutton cubed, salt, ground black pepper, 2 carrots grated, half a fistful of raisins, basmati rice and zeera (cumin seeds)

Directions:
Fry one coarsely chopped onion in oil until it is golden brown.
Remove onion and grind to a rough pulp.
Use the same oil to brown the lamb/chicken pieces.
Add a cup or so of water, salt and pepper, simmer til tender.
Remove the meat, and add the ground onion to the stock. Cook until 1 cup of stock remains.
Grate 2 carrots and cook them in oil until brown. Add raisins and fry til plump. Drain and set aside.
Parboil the rice (boil until al dente - do not completely cook the rice!!) and drain the rice. Place the rice into a large pan.
Sprinkle zeera (cumin seeds). Pour the meat stock over it and stir.
Layer the meat and half of the carrot-raisin mixture over rice.
Cover the pan tightly and place it in a hot over for 40 mins.
Sprinkle the rest of carrot-raisin mixture on top and serve.

so a few questions...

do you use regular basmati rice- as in the same one we use to make our biryani, etc? i've heard there is a different kind of rice called "silla" or something to that matter. you have to soak it longer before its cooked. do you know if "silla" rice is used or regular basmati?

do you parboil the rice in the onion/oil stock? or plain water?

do you put the rice in a clean large pan (meaning no oil/ water/ onions are in the pan)?

so no other spices are used besides salt and pepper and cumin? how much of each do you use?

how many cups of rice is the above recipe intended to make?

I hate those people who are so kanjoos with their recipes. It bugs the heck out of me. Whatever happened to sharing your knowledge. But most of time i discover that they are just too embarrassed to admit that they are using Shaan Masalas.
Im proud to use Shaan Masalas at least i know i won't die from tasteless food.
