one of my personal favs is Kabuli Pulao. I pulled the recipe for this from a website though.
Ingredients:
Heat 1/2 cup vegetable fat in a Dutch oven or pressure cooker
add 1 medium onion diced, and fry until lightly browned.
Add 1 lb. of beef or lamb - cut in 1 inch cubes and brown.
Add 2 cups water
1 tsp. salt
1 1/2 tsp. mixed spices
(equal parts of cinnamon, cloves, cumin and cardamom, ground)
Direction:
Cover and simmer, or cook under pressure until the meat is tender. Remove the meat and set aside - save the juice for cooking the rice. Cut 2 carrots into toothpick size pieces. Heat 1/2 cup vegetable fat in a saucepan. Add 1 tbsp. sugar and the cut up carrots and simmer until tender. Remove carrots from fat, add 1 cup dark, seedless raisins, and cook until they swell up. (You may also brown a couple of tablespoons of blanched almonds.) Remove each and set aside. To cook the rice, boil the meat juice and add 2 cups long grain rice, 1 1/2 tsp. salt, and sufficient water to bring the liquid 2 inches above the rice. Add the oil in which the carrots were cooked and 1/8 tsp. saffron (optional) to the cooked rice. Put meat and rice in a large casserole, cover and set in a 300 degree oven for 20-30 minutes. Place meat in the center of a large platter. Mound the rice over the top and sprinkle with carrots, raisins, and almonds. Serves 6-8
dam-pukht is nice but i don't have the recipe. i believe that it will be difficult to make this dish as well outside pakistan
Murgh Kebab Recipe
Ingredients
2lbs Boneless chicken breasts or thighs
1 tbsp. Corn oil
2 tbsp. plain yogurt
2 tsp. crushed garlic
1 tsp Salt
1/2 tsp. ground coriander
Yellow onion
Green bell pepper
1 box Cherry tomatoes
Instructions
Cut chicken into 2-inch pieces. Place in a bowl and add garlic, oil, salt, coriander and yougurt. Mix well and marinate overnight. Cut bell pepper on thick strips. Cut onion on large pieces. Put chicken pieces on skewers alternating with tomatoes, onions and green peppers. Grill for about 12 minutes, until done.
Meatballs with Noodles Tossed
Ingredients:
Meatballs :
2 lb Ground beef
1/2 ts Ground cinnamon
2 ts Ground coriander
1 ts Ground turmeric
Cayenne pepper
Salt
Black pepper
2 cl Garlic ( crushed )
1 tb Vegetable oil
1 Spanish onion - finely chopped
6 lg Ripe plum
Tomatoes:
chop 4 Sun-dried tomatoes finely chopped
Noodles:
1 lb Fresh fine egg noodles - in Asian markets
1 1/2 c Plain yogurt
2 cl Garlic finely chopped
1/2 c Fresh mint - chopped
Direction:
For the meatballs: In a bowl, combine the beef, cinnamon, coriander, turmeric, cayenne, salt, pepper, and half of the garlic. With clean hands, mix thoroughly, then shape the meat into 3/4-inch meatballs. Set them aside.
In a large, flameproof casserole, heat the oil, add the onion, and cook over low heat for 10 to 15 minutes or until it is very soft. Turn the heat to medium-high and add the meatballs. Cook, turning them often, until they lose their pink color. Add the plum tomatoes and remaining garlic. Cover the pan, turn down the heat, and simmer gently for 10 minutes. Add the sun-dried tomatoes, salt, and pepper and cook the mixture for 5 minutes over low heat, stirring once or twice.
For the noodles: Bring a large saucepan of water to a boil. Add the noodles and cook for 2 to 4 minutes or until they are tender but still have some bite. Drain the noodles and transfer them to a bowl. Stir in the yogurt, garlic, and salt. Toss thoroughly and transfer to 6 wide bowls. Spoon meatballs around the edges of each bowl of noodles, add the mint to the center and serve at once
