Homemade Only!!! The jarred stuff is so chock full of preservatives is gross. I make a batch every two weeks and keep in a Dannon Yougurt ka dabba lol in the fridge...peeled garlic cloves, peeled and cubed ginger and a tiny bit of water...whirr it up in the blender and you're done.

is it necessary to peel the ginger? growing up, my mom never peeled it.. lol
Because it's a root, peeling guarantees getting rid of all the dirt. But if you wash it well, peeling is not necessary.

I always peel my ginger. The garlic I buy already peeled, my local desi grocery store sells peeled garlic cloves in quart sized bags

Homemade > store bought
Once a week, mom peels ginger and garlic, and freezes them in separate plastic bags. Before cooking, just take as much as you need and throw it in the blender, like khatti mentioned.

My mum freezes it. Do a month or 2s worth. She peels it, washes it then grinds it in food processor. Then freezes it and makes cubes. We do ginger and garlic separately. Takes the hassle out of doing it when u need it. Shop bought jars smell horrible.

We buy ton of it make paste, freeze it using ice-cube tray and store in freezer in ziplocks. Normally we create batch of 2-3 months supply. Its easy cooking then on as we have to drop a cube or two everytime

My mum makes it for a month, peels garlic and ginger both, makes a paste of them and adds a bit of Oil so it would stay fresh for sometime and it doesn't get green or smell bad. Then she saves the paste in a glass bottle and leaves it in the fridge.

Always homemade. I peel both ginger and garlic and weigh so i have equal quantities approx, grind and freeze in ice cube trays(kept for this purpose so dont have smelly ice!) then takeo ut into freezer bags and take out 2 cubes each time. If i have leftover mixutre i takeout in yoghurt pots freeze and when defrosting for fridge add in oil to preserve it and keep from going green.

Hi khattichic so you peel ginger and garlic separatly, add little bit of water and tha freeze?. Is this right?. I want to start using homemade ones but i am worried it might ho bad or something. What are exact steps thag you follow to make sure i do it correctly

Yes, I peel the ginger and cut it into cubes/pieces about the same size as a garlic clove. I use an equal amount of peeled garlic cloves (I don't weigh it, just eyeball andaaza) and then I add these to the blender and trickle in a tiny bit of water just to help it all mix/blend nicely (you're not making soup! don't go overboard on the water) and that's it!
I do not freeze in ice cube trays or anything like that. I keep my adrak lassan in an empty plastic yogurt container straight in the fridge. It does not spoil nor go bad nor smell up the fridge because the lid is on tight. Each batch lasts me roughly 2-3 weeks. It's been done this way in my family by all the women for the past 40 years lol.

This is exactly what I do but a 5/6 month supply. Gives about 3 full freezer sized ziplock bags.
I am very particular about the origin of the garlic too, I never buy the china or east Asia produce
Off topic but I make the harri mirchi cubes like that too, but very teeny tiny ones, that takes longer since I de-seed half of the batch and the rest with the seeds to keep a munasab theeka-pan

Homemade and mine one do lasts for a month or sometime a week more. After baby I thought may be I need to buy but then I bought peeled garlic which really saves lots of time. I don't put very equal quantity it's 60% garlic n 40% ginger, store it in airtight jar n it's great for a month or little more

So noone uses fresh garlic /ginger anymore? Garlic stays fresh for a long time, so long as its stored away from light. Doesnt take long to break off a few cloves, peel and dump them in the handi. When blitzed and frozen, they do tend to lose quite a bit of their taste and aroma.

You're not alone! I've used a variety of shop bought jars and I can tell you that there are some really awful ones out there but there's one particular brand that I find perfectly fine to use. It's by Natco with a pink sticker across the front. It doesn't stink like the others and it tastes just like fresh onion and garlic. It really depends on you. I found it too long to peel and grind ginger and garlic, especially if I've just got home from work.
I even tried to slice onions once and freeze them (it doesn't quite work and stinks up the entire kitchen every time you open the freezer!)

Don't have time to peel and grind garlic and ginger everytime I cook, which is very little as it is, don't have much time with 3 kids under 5, even before that, when ur working its hard enough finding time to cook. So freeze cubes of it grinded to a paste. I even make a whole batch of masala n keep it for the base of all my salans, as I take a long time to bhunify my masala to get the right consistency.
