The alcohol evaporates, not the wine. The wine which is 80% grape juice has a tingy soury sirkay waala taste that stays.
Listen, I don't have any wine at home that I add to frontier karahi gosht or haleem or nihari for that matter. I just asked because there are some dishes out there which are served at business luncheons which may have used wine in the process. I actually hate the smell of wine. But I can hardly smell the alcohol in those dishes. So, that's why I asked.
