Achari Baingen

I had them in a restaurant and they were to die for, they were cooked in yoghurt that much i could make out, anyone have the recipe?

Re: Achari Baingen

I know the variation u has was different. But here is an excellent recipe. What we do is, cut them in slices. sprinkle shan achari masala on both the sides n let it stand for a bit. Shallow fry both the sides. Then dish them out. Spread beaten salted yogurt on them. And further top it with Onion and tomatoes masla, and coriander..

Re: Achari Baingen

Re: Achari Baingen

I have an awesome achari baingan recipe that my family loves!! It's not dahi based, but has all the achari spices like kalonji, rai, saunf, zeera etc in it. It comes together really fast too! I'll post the recipe in my sticky thread

Re: Achari Baingen

Muzna Onions n tomatoes are slightly fried..cppked till they soften. Then some achari masala is added. Coriander goes on top.

I had one recipe that I
Found in a madhur Jaffrey cookbook for achari baigan . It is delicious. Like kc mentioned it used all the achari spices .

Sounds delicious . Is this fish suppose to have gravy? Are the onions fried?

^^dish no fish

Re: Achari Baingen

Doesnt really have gravy . You cook the onions.
