hamwatno we’ve never had this problem b4 but lately whenever my ammi hazoor is getting ready to make chapattis, the prepared dough seems so loose and soggy? And the chapati well it doesn’t come out to well if you know what I’m trying to say? that is with freshly kneaded aata not the aata which was refrigerated a day b4??

just use less water when "goonding", the atta will be less floppy and more managable. i like it when its quite quite hard

she can always add khushki wala atta to make proper perha..

True Q mate we do do that to counter the looseness and to add some life to the gola aurf pera, but that crispness which was present in the chapattis is missing.

maybe, there's nothing wrong with the method of your mom..maybe, its the atta..did your mom thought to change the atta brand..because sometimes flour company's quality changes too.

maybe u have hit the nail on the head. we changed to elephant aata a few weeks back.
