Aata goondhna

I have no clue how aata is goondh-ed :smiley: .. I am sure i will have to make roti every day of my life in a few months. So some one please teach me step by step how to prepare the flour to make roti or parathas

I would love to write down a method for you but I am not very good at atta goonding so I will leave this for other mods :D

make a well of aaTaa...put a lil bit of salt...pour water 2/3 of the well...now, cover up the well with aaTaa from all around it...after this, roll it into a dough then knead it with the knuckles of ur both hands into a long bread shape then roll it over and repeat the process 4-5 times. then let it stand covered with a wet cheesecloth. :)

Ammi and my sister have a machine that goonds the atta within 5 minutes and without getting your hands messy. One of the best 6,000rs ever spent.

Funny, I made more roti in Pakistan at my parents' house than I do here in the US. We getready made naan mostly, though sometimes I make roti and parathas too.

Hi Daffy,

Right I am back now ... this is how you goond aata :

In a dry bowl , take about 3 large cups of flour ... then pour in about 3/4 cup of water and start mixing it with your finger tips ... ( if you use your entire hand, it will all become very gooey )

If you still see dry flour, just add a tsp more water and keep mixing lightly until now more dry flour is left ... now start kneading the ata ... every few seconds just wet your hand very lightly with water , pat the ata and continue kneading ... Tip: dont knead the same side for more then 3 seconds .. you have to be quick or else you will need to use lot more water and that can make the ata go runny..

Ata goonding is nothing but practice ... this is how to troubleshoot ata goonding:
- If you mix enough water in the beginning, ata will come out soft and smooth ... BUt if you mix very little water initially, ata will become really hard and will give you a tough time goonding.

  • Another tip is that after you have wet the dry flour and given it the first 2 second knead ... leave it covered for 10 minutes .. then kneading just for an additional 2 minutes will do the trick

  • If the ata becomes very runny coz you have mistakenly added too much water in the beginnning, then worry not, get more dry flour and add a few tablespoon of it ... and after that dont use any more water .. jsut wet your hands lightly and pat the ata when you need it to stop sticking to your fingers ..

  • The ata is ready when it become smooth and stops sticking to your fingers ...
