I am sorry that i have to start another thread about Zarda butt…
when I make zarda - the sweetness and everything is fine but in the end when all the water has evaporated - the rice turns very hard - what am i doing wrong?
Am i adding too much sugar? here is how i make it!
Boil 1 cup rice with yellow colour. When its half cooked, i drain it. I layer it with sugar and illaichi and add bit of milk and cook on high so the sugar gets dissolved. Hmmm…i think i get lost then so i let the syrup evaporate and cook it on low heat for couple of mins - and voila we have hard zarda…

u dont use butter or oil?
i add sugar in butter and let it dissolve for a minute or so and then add rice into it (and other ingredients later)...and mine always turns out really good ..

My mom once said if you let the sheera cook more then a min or two, it makes the rice stiff. She warms up the oil, add ilaichi, then sugar and milk/cream/yogurt (either one of them). Mix it for a min or two and add rice.

No i dont - maybe i need to so the rice is kept moist?

Interesting i might try that - will that defo help make it softer Lusi? Also, how much milk should you add? Do you need to cover the rice in the liquid mixture no?

Sunset, i think you need to add oil to zarda. Corrupt Angel posted a recipe a week or so ago for zarda by Zubeida Tariq and it turned out perfect when i tried it.
