Aaloo Qatlay/Pakoray...

Please share your recipe of the thinly sliced potatoes coated in besan and deep fried .. what spices do you guys add in the besan along with the normal salt and chilli powder?

would it be any different to what you add in the usual pakora/besan mixture (the fluffy pakoras with onions, potatoes and other veg etc)??

We always make the second kind, with small diced potatoes. I guess the mixture depends on whether you want them to soft and fluffy or more crunchy and crispy?

I just add red chillies and salt to the besan and coat potato slices and fry them.Sometimes I sprinkle chaat masala on top of them after they are fried.

For the regular pakoras with onions/potato/spinach,I add chopped green chillies and some whole coriander seeds and anardana to the besan mixture along with the regular salt and red chillies.

For the qatlay I add, a small amount garlic powder, cumin - whole and ground, chilli powder, salt, amchoor, lemon juice and bicarb soda.

For other pakoray I do similar, but will also add chopped corriander, green chillies, sometimes ajwain.

For the qatlay I just add salt,chilli powder,and a pinch of bicarb.

For the other type,I add add salt,chilli powder,bicarb.,then hara dhaniya/mirche,sliced onions,whole dhaniya and zeera (coarsely ground).Sometimes grated potatoes.

have you ever tried **qatalme***? it's like namak-paare in syrup...have anyone tried that?*

I ended up adding salt, red chilli powder, chilli flakes, whole cumin, cumin powder and some dried coriander powder - the result was yummy!

KKF- no i haven't tried that but it sounds interesting!
