Now I’m craving it. Picked up the fresh methi and have aaloo.
Need recipe…help please!
I don't know how Aunty made it but I LOVE it and make it this way..
1 medium sized onion
1 tomato
1/2 bunch finely chopped methi leaves (washed very well)
1 potato (cut into cubes)
2 tablespoons yoghurt
gin/gar paste
zeera powder, haldi, red chilli powder, dhania powder, salt.
Saute the onion till light brown and add-in the potato's.. cook till they're half done and add-in the tomato and methi leaves. Cook over very slow flame till they're fully cooked. Add the yoghurt (beaten well) and all the masala's. Let it simmer for another 8-10 mins and add green chillies and fresh green dhania.

Muzna, my mom makes it without any onion or tomato, so here is another version.
Cut potatoes with skin on. Typically aloo methi that is made in UP India requires the aloo to be cut into small cubes. Wash methi and chop.
In a karhai, heat oil, add whole red chillies, dhaniya, crushed red chillies and salt. If you have mustard oil, the best flavor will come out of that. Then add the aloo methi and some khatai to neutralize the bitterness of the methi. Cover and cook on low.
That's it.

My MIL used to make it when she was visiting us...and she followed the same recipe as Niksik...her saying was that the lesser stuff that goes into 'bhujia' type salan,the better it tastes...and she was right...it used to be yummmmy...!!!

Sometimes , If i want it karhai style , I just crush quarter of an onion, very little garlic (quarter teaspoon) and half teaspoon ginger and then after they are fried well , add the masala’s (salt, red chilli powder, green chillies chopped , zeera ) … and finally add the methi and lower the heat … cook it on very low heat in dum .. do not use any water …
Finally chop the potatoes in tiny cubes and add them in and keep cooking them on dum …
Thats pretty much it … turns out tasty ![]()

can you find fresh maithi leaves in supermarkets? What is it called since I have never seen fenugreek leaves.. does it have another name?

I have only seen it in Indian grocery stores and never at the regular regular stores,so I doubt it that you will find it elsewhere.

Guys...methi is so versatile...I even use it in ommelttes, salads and other dishes etc...enhance the taste and flavor...
I think I had an overload during my first pregnancy and that didnt go well so it still jsut makes me gag sorry – methi AND that song from the film Karam.. Tinka Tinka…
